Description
SPICY CALABRIAN SAUSAGE Chain ,so called because it is woven by hand to obtain the shape of a real chain, is obtained from the meat of the shoulder and under the rib of coarse-ground minced pigs with lard, salt, sweet and spicy chilli.
The mixture is then bagged into natural pork casings and left to mature in a dry and fresh environment for about a month.
Once the maturation process is complete, the chain sausage is ready to be tasted.
This characteristic salami is one of the most representative of the Calabrian tradition, still in many families it is custom to make it at home and eat in company, together with a good glass of wine.
