Calabrian Butter Beans
Calabrian butter beans (typically called butter beans because of their creamy texture when cooked) are a very tasty variety of bean.
This legume has excellent nutritional values. It is rich in carbohydrates, has good protein and low fat content, while the skin of the bean is rich in fibre.
Dried white beans have been an important food for the people of Calabria for centuries, replacing meat, which was too expensive at the time and reserved only for the rich.
In Calabria, beans are called ‘Suriaca’ and their cooking in the Pignata (an earthenware pot) is typical, a centuries-old tradition handed down from generation to generation. In ancient times, the Pignata was placed next to the fire in the fireplaces. Cooking in this earthenware pot gives the beans a particularly unique flavour.
To cook Calabrian dry white beans at their best, it is essential to leave them to soak for six hours before cooking. After this time, discard the water in which the beans have been soaking, rinse them and cook them in a pot or in our Pignata, making sure that the water covers them completely, for about two hours.
Butter beans are ideal for preparing soups and velvety soups thanks to their special characteristic of becoming creamy once cooked.
